Cold Weather Potato Stew/Soup? :)

If you need a good cold weather recipe, my wife has made this several times and I love it! It’s a potato soup/stew with smoked sausage. Not exactly sure how much salt she uses but it’s always pefect so I don’t even have to put more salt on it. I think the sausage does the trick :)

Ingredients

1 lb of smoked sausage, sliced
4 medium potatoes, cubed into 1″ pieces
1 onion, chopped
1/2 cup green onions
1/2 cup of dry roux
6 cups of water
2 chicken bouillon cubes
salt & pepper

How to make it!

Brown sausage & saute onions at same time
Add roux and about 1/2 cup of the water until it looks creamy
Add the cubed potatoes and cook 5 mins.
Add the rest of the water, seasonings and bouillon cubes
Let it cook on low for about 35-45 mins.
Stirring often.
